Ingredients
- 6 medium zucchini
- 1 tsp kosher salt
- 1 pinch of fresh ground black pepper
- 1-2 tsp of Zest ev’rything
- 2 tbsp of olive oil

- 2 medium zucchinis
- 1 tbsp olive oil (or avocado oil)
- 1/2 tsp salt (adjust to taste)
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp dried oregano
- 1/2 tsp dried thyme or Italian seasoning
Preparation
- Wash and pat dry the zucchini.
- Cut them into two, then cut in julienne.
- Sprinkle the salt and black pepper over the zucchini, mix well.
- Add the Zest ev’rything seasoning over the zucchini.
- Mix well until combined.
- Drizzle the olive oil over it, and toss really well.
- Cook in an air fryer under the veggie setting at 360 or 370 degrees until cooked or slightly browned.
Instructions
- Prep the Zucchini:
Wash and dry the zucchinis. Cut them into uniform sticks — about 3 inches long and ½ inch thick. (Think fry shape — not too thin so they don’t get soggy.)
- Season:
In a large mixing bowl, add the zucchini sticks. Drizzle with olive oil and sprinkle all the seasonings: salt, pepper, garlic powder, onion powder, oregano, thyme, and chili flakes (if using). Toss well to coat evenly. You can also add parmesan at this stage for extra crispiness.
- Air Fry:
Preheat your air fryer to 200°C (390°F) for 3–5 minutes.
Arrange the zucchini in a single layer in the basket. Don’t overcrowd — do it in batches if needed.
Air fry for 10–12 minutes, shaking halfway through. Fry until golden brown and slightly crispy on the edges.
- Serve:
Remove and serve hot. These go great with a dip like garlic yogurt sauce, marinara, ranch, or even hummus!
