Ingredients
- 2 cups of rice (jasmine or basmati)
- 1 tbsp of sofrito
- 3-4 tbsp olive oil or canola oil
- 3 medium cloves of minced garlic
- 3 cups mixed peas and carrots
- Sausage or chopped bacon
- 2 tsp of kosher salt – 4 cloves
- 3 cups of vegetable stock or plain water
- 1 tbsp of Rice E-Z seasoning
- 1 green scotch bonnet pepper + 1 bouquet garni.
Preparation
- Fry the sausage or bacon for 3 to 5 minutes
- Add the sofrito, cook for 1 minute.
- Add the chopped garlic, stir for 1 minute.
- Add the mixed veggie and cook for an additional 2 minutes.
- Add the rest of the ingredients and the stock or the water.
- When the liquid comes to a boil, wash the rice and add it to the stock.
- Let it cook uncovered for 25 to 35 minutes or until cooked through.
